Title: Cattail Seafood Chowder (Ai)

Yield: 4 Servings

4lgCattail roots *
5cWater
2smPuffballs, chopped (or
  Mushrooms) *
1/2tsChopped wild onions (or
  Scallions) *
1/8tsFreshly ground black pepper
2tsSalt
1/2tsButter
1 1/2lbFresh cod, snapper, or
  Salmon

Heat oven to 300 degrees, and roast cattail roots in shallow glass pan for 20 minutes. Let cool, then dice into cubes.

In large pot, simmer the diced cattail roots with the water for 40 minutes. Add next five ingredients to cattail roots and simmer for 10 minutes.

Cut fish into medium-small rough cubes. Add fish to liquid mixture and simmer for 10 more minutes. Serve.
